HOT APPLE JUICE WITH GINGER AND EARL GREY

I pick perfect apples without bruises from my apple tree in the autumn and store them over winter – they last until late spring. The apples that have little imperfections – the ones that have fallen off the tree or are too small to store – I juice for plentiful supplies of my own fresh apple juice. I then freeze the juice in litre-sized containers and take out as and when I need it. In the winter, I like to warm the apple juice with spices, such as cinnamon, cardamom and cloves, or like here, with ginger and Earl Grey tea.
